Serves 4 (serving size: about 1/2 cup)

1 cup light coconut milk
1/4 cup water
1 cup uncooked long-grain white rice
1/4 cup chopped cilantro


Combine coconut milk and water in a medium saucepan over medium-high heat; bring to a boil. Stir in rice. Reduce heat to low; cover and simmer 17 minutes or until liquid is absorbed. Let stand 5 minutes. Stir in cilantro.
