3/4 cup yellow cornmeal
1/4 cup all-purpose flour
2 teaspoons salt
1 teaspoon ground red pepper
1/4 teaspoon garlic powder
6 (4- to 6-ounce) farm-raised catfish fillets
1/4 teaspoon salt
Vegetable oil


Combine first 5 ingredients in a large shallow dish. Sprinkle fish with 1/4 teaspoon salt; dredge in cornmeal mixture, coating evenly.

Pour oil to a depth of 1 1/2 inches into a deep cast-iron skillet; heat to 350°. Fry fish, in batches, 5 to 6 minutes or until golden; drain on paper towels.
