Citrusy Broccoli and Cauliflower Salad

Citrus fruits do double duty in this recipe. First, grate the orange and lemon rinds; then, cut the fruits in half and squeeze out the juice.

Ingredients

1/4 cup light mayonnaise
2 teaspoons grated orange rind
2 tablespoons fresh orange juice
1 teaspoon grated lemon rind
1 tablespoon fresh lemon juice
2 teaspoons sugar
2 teaspoons Dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
3 cups small broccoli florets
3 cups small cauliflower florets
1/2 cup chopped red bell pepper
1/3 cup raisins
3 slices center-cut bacon, cooked and crumbled

Preparation

Prep: 25 Minutes
Chill: 4 Hours

Combine first 9 ingredients in a bowl; stir with a whisk until blended.

Combine broccoli and remaining 4 ingredients in a large bowl. Spoon mayonnaise mixture over broccoli mixture; toss gently to coat. Cover and chill 4 hours.
