Citrus Vinaigrette

Here's a tip for chopping lots of basil or any other leafy herb. Pack the leaves in a measuring cup, and snip with kitchen shears until they're finely chopped.

1 3/4 cups (serving size: 1 tablespoon)

3/4 cup frozen orange juice concentrate, thawed and undiluted
1/2 cup water
1/4 cup plus 2 tablespoons fresh lime juice
1/4 cup minced fresh basil
1 1/2 tablespoons olive oil
1 1/2 teaspoons minced fresh tarragon
1 1/2 teaspoons Dijon mustard
1/8 teaspoon salt


Combine all ingredients, and stir mixture well with a wire whisk. Serve chilled or at room temperature over mixed salad greens, fruit, or seafood.
