Citrus-Poached Orange Roughy

4 (6-ounce) orange roughy fillets
Cooking spray
1/2 teaspoon grated orange rind
1/3 cup fresh orange juice
2 tablespoons lime juice
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
2 tablespoons chopped green onions

Cook: 20 Minutes

Arrange fish in a single layer in a 13- x 9-inch baking dish coated with cooking spray.

Combine orange rind and next 4 ingredients in a small bowl, stirring well. Pour mixture over fish, and bake at 400° for 20 minutes or until fish flakes easily when tested with a fork.

Remove fish from dish with a wide spatula, and place on a serving dish. Sprinkle fish evenly with green onions.
