Cooking Light
The Gala apples blended with the Calvados brandy in the topping give this dish a deep, sweet flavor. You can substitute apple cider or apple juice for the Calvados, if you like.

1. Preheat oven to 250°.

2. To prepare topping, combine apple and cornstarch in a medium bowl, tossing to combine.

3. Place 1 1/2 cups water and next 6 ingredients (through salt) in a medium saucepan over medium heat. Bring to a simmer; cook 5 minutes. Add apple; cook 10 minutes or until apple begins to soften and release juices. Stir in maple syrup; remove from heat.

4. To prepare French toast, combine milk and next 4 ingredients (through eggs) in a medium bowl, stirring with a whisk.

5. Melt 1 teaspoon butter on a nonstick griddle or large nonstick skillet over medium-high heat. Dip 4 bread slices into milk mixture, turning to coat both sides and allowing excess milk mixture to drip off. Place bread on pan, and cook 2 to 3 minutes or until bottom of bread is lightly browned. Turn bread over, and cook 2 minutes until lightly browned. Place French toast on a baking sheet; place in oven to keep warm. Repeat procedure with remaining butter and bread slices. Serve apple mixture over French toast.
