Cilantro-Lime Topping

Cilantro-Lime Topping add Southwestern flair to grilled corn.

1 New Mexico chile
1/4 cup butter
1 tablespoon chopped cilantro
1 teaspoon lime zest
1 teaspoon lime juice


Briefly toast chile in a pan, then finely chop and set aside. In a food processor, whirl remaining ingredients until smooth. Spread butter on corn and sprinkle with chile.
