Fragrant, earthy cumin stands out in this quick whole-grain side and turns the quinoa a pretty golden color that's accented by cilantro.
Serves 2 (serving size: about 2/3 cup)
1. Combine 2/3 cup water and quinoa in a small saucepan; bring to a boil. Reduce heat; cover and simmer 13 minutes or until liquid is absorbed. Stir in remaining ingredients.
