Chocolate-Peppermint Muffins

1 (7-ounce) package chocolate-chocolate chip muffin mix
1/3 cup fat-free milk
2 tablespoons unsweetened applesauce
1 egg, lightly beaten
1/3 cup crushed peppermint candy (about 12 round peppermint candies)
Vegetable cooking spray


Prep: 8 Minutes
Cook: 13 Minutes

Combine first 4 ingredients in a small bowl. Stir just until dry ingredients are moistened. Fold in peppermint candy.

Spoon batter into a muffin pan coated with cooking spray, filling two-thirds full. Bake at 425° for 13 to 15 minutes or until tops spring back when lightly touched. Remove from pan immediately.
