Chili with Fruit on the Side

6 ounce lean, ground beef
1/4 onion (small)
1/4 cup fresh mushrooms
1/4 bell pepper
1/2 cup canned kidney beans, rinsed and drained
1 1/2 cups canned, crushed tomatoes, low sodium
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/4 ounce low fat or non fat shredded cheese


Rinse and finely chop onion and bell pepper. Clean mushrooms and chop. In a nonstick skillet, brown meat in oil with onions, mushrooms, green pepper and spices. Drain and rinse kidney beans. Add beans and canned tomatoes with their liquid to mixture. Simmer 10-15 minutes, stirring occasionally. Top with shredded cheese. Enjoy!
