A little bit of butter is great, but seasoning corn with chili powder and grated lime rind takes corn from a backyard favorite to something really special.
Serves 4 (serving size: 1 ear)
1. Heat a grill pan over medium-high.
2. Combine chili powder, rind, 1/4 teaspoon salt, sugar, and pepper in a bowl; rub over corn. Coat grill pan with cooking spray. Add corn to pan; cook 10 minutes, turning occasionally. Remove corn from pan.
3. Top corn with butter and remaining 1/8 teaspoon salt.
