1 tablespoon olive oil
1 onion, sliced
9 ounces chorizo, sliced
2 15-oz. cans chickpeas, drained and rinsed
2 pints cherry tomatoes, halved
1 teaspoon smoked paprika
Salt and pepper
3 tablespoons chopped fresh parsley


Prep: 8 Minutes
Cook: 12 Minutes

1. Warm oil in a skillet over medium-high heat. Sauté onion until softened, about 3 minutes.

2. Add chorizo. Sauté until warmed through, 1 to 2 minutes.

3. Add chickpeas, cherry tomatoes and paprika. Cook until tomatoes soften and juices are simmering, 5 to 7 minutes. Season with salt and pepper. Sprinkle with parsley and serve.
