1. Combine first 9 ingredients and 1/4 teaspoon pepper in a large bowl. Add lettuce; toss to coat.
2. Place chicken between 2 sheets of plastic wrap; pound to 1/4-inch thickness. Sprinkle chicken evenly with remaining 1/4 teaspoon pepper and salt.
3. Heat a grill pan over high heat. Coat pan with cooking spray. Add chicken; cook 3 minutes. Turn and cook for 2 minutes. Remove from pan. Place 1 chicken breast on each of 4 plates; top each with 1 cup slaw. Sprinkle evenly with 1 ounce Parmesan.
