Chewy Oatmeal Cookies

1/2 cup butter, softened
1/2 cup lard, softened
1 cup sugar
1 cup firmly packed brown sugar
2 eggs
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups quick-cooking oats, uncooked
1/2 cup chopped pecans
1/2 cup flaked coconut


Cream butter and lard in a large mixing bowl; gradually add sugar, beating well. Add eggs, and mix well.

Combine flour, baking powder, soda, and salt in a small mixing bowl; add to creamed mixture, stirring until well blended. Add oats, pecans, and coconut, mixing well.

Drop by heaping teaspoonfuls 2 inches apart onto lightly greased cookie sheets. Bake at 350° for 6 to 8 minutes. Remove from cookie sheets, and cool on wire racks.
