Cherry, Cashew, and Pork Sandwich

2 teaspoons cashew butter
2 (1-ounce) whole-grain bread slices
2 ounces thinly sliced grilled pork tenderloin
2 tablespoons caramelized onions
1 tablespoon chopped dried cherries
1/4 cup arugula


Spread half of cashew butter on one side of each bread slice. Layer one slice with pork, onion, cherries, and arugula. Top with remaining bread slice, cashew butter side down.
