Serves 8 (serving size: 8 chips)
Preheat oven to 400°. Split pita rounds in half horizontally; brush rough side of each with 1/2 teaspoon olive oil. Cut each into 8 wedges. Arrange in single layers on 2 baking sheets. Combine Manchego cheese, oregano, salt, garlic powder, and ground red pepper in a bowl. Sprinkle pita with mixture. Bake for 10 minutes or until golden brown, rotating pans halfway through.
