Cheese Sauce

1 tablespoon butter or margarine
2 tablespoons all-purpose flour
1/4 teaspoon salt
Dash of white pepper
1 cup milk
3/4 cup (3 ounces) shredded sharp Cheddar cheese


Melt butter in a heavy saucepan over low heat; add flour, salt, and pepper, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened. Add cheese; stir until cheese melts.
