one 9-inch pastry shell

1 cup all-purpose flour
1/2 teaspoon salt
1/4 cup shortening
1/4 cup (1 ounce) shredded sharp Cheddar cheese
3 to 4 tablespoons cold water


Combine flour and salt; cut in shortening and cheese with pastry blender until mixture resembles coarse meal. Sprinkle cold water evenly over surface; stir with a fork until all dry ingredients are moistened, shape dough into a ball; chill. Roll dough out to 1/8-inch thickness on a lightly floured surface. Fit pastry into a 9-inch pie plate.
