Flavorful Cashew Rice is quick and easy. Just stir in chopped green onions and cashews to cooked long-grain rice and you have a hassle-free side dish.
Serves 4 (serving size: about 1/2 cup)

1 cup water
1/2 cup long-grain rice
1/4 teaspoon salt
1/3 cup sliced green onions
1/4 cup chopped unsalted cashews
Combine water, rice, and salt in a small saucepan; cover. Bring to a boil, reduce heat, and simmer 12 minutes. Let stand 5 minutes. Fluff with a fork; stir in green onions and cashews.
