Capon Gravy

1/4 cup plus 2 tablespoons all-purpose flour
1/4 cup plus 2 tablespoons capon pan drippings
2 cups milk
Salt and pepper to taste


Brown flour in a skillet over medium heat; stir in pan drippings to form a smooth paste. Gradually add milk. Cook, stirring constantly, until thickened and bubbly. Season to taste with salt and pepper. Serve as a side dish.
