Camp-Style Potatoes

Ingredients

1/2 pound bacon, diced
1 medium onion, chopped
1 medium-size green pepper, seeded and chopped
2 1/2 pounds potatoes, scrubbed and sliced
1 (10-ounce) can tomatoes with chiles
Salt and pepper to taste

Preparation

Cook bacon in a large skillet until browned. Add onion and green pepper; sauté until tender. Drain off fat, if desired.

Add potatoes and tomatoes, stirring lightly. Reduce heat; cover and simmer 15 minutes or until potatoes are tender. Add salt and pepper to taste.
