Blueberry Dressing

1/2 cup fresh or frozen blueberries, thawed
1/2 cup water
1 tablespoon plus 1 teaspoon sugar
1 tablespoon olive oil
1/2 teaspoon lemon rind
1/4 cup lemon juice
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper

Preparation

Combine all ingredients in a small bowl, stirring well. Cover and chill thoroughly. Serve over steamed asparagus, fresh fruit salads, or grilled or poached chicken. Store dressing in refrigerator up to 3 days.
