Black-Eyed Pea Salad

3 tablespoons red wine vinegar
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
2 (15.8-ounce) cans black-eyed peas, drained and rinsed
2 celery ribs, diced
1/4 cup chopped fresh cilantro
1/4 cup diced red bell pepper
1/4 cup diced green bell pepper
1/4 cup diced red onion


Stir together first 4 ingredients in a medium bowl; stir in black-eyed peas and remaining ingredients. Cover and chill at least 1 hour.
