1 tablespoon lemon juice
Salt and pepper
1 teaspoon Dijon mustard
1 shallot, minced
1/4 cup vegetable oil
1/4 cup olive oil

Mix vinegar, lemon juice, salt, pepper, mustard and shallot. Whisk in oils until blended and thick.
