1 (4- to 5-pound) baking hen
Vegetable oil


Remove giblets and neck from cavity of chicken, and reserve for dressing. Rinse chicken with cold water, and pat dry. Rub skin well with oil. Place chicken, breast side up, in a roasting pan. Bake, uncovered, at 375° for 2 hours; baste chicken frequently with pan juices. Serve with Breadcrumb Dressing.
