Bacon Phyllo Cups Recipe

Perfect for a night of entertaining friends, these phyllo cups are overflowing with delicious melted Brie, crumbled bacon, and sweet apricot jam.

Serves 4 (serving size: 2 filled phyllo cups)

3 tablespoons apricot jam
1 tablespoon cider vinegar
3 slices cooked and crumbled center-cut bacon
8 teaspoons Brie
8 frozen mini phyllo shells (such as Athenos), thawed
1 slice cooked and crumbled center-cut bacon
Fresh thyme


Combine apricot jam and vinegar in a small saucepan over medium heat. Cook 1 minute. Add 3 slices cooked and crumbled bacon; bring to a boil. Reduce heat; simmer 3 minutes. Place 1 teaspoon Brie into bottom of each mini phyllo shell. Top evenly with jam mixture. Bake at 350° for 10 minutes or until cheese is bubbly. Sprinkle evenly with 1 slice cooked and crumbled bacon and fresh thyme.
