Baby Greens with Champagne Vinaigrette

1/4 cup Champagne vinegar
2 tablespoons Dijon mustard
2 tablespoons mayonnaise
1 teaspoon sea salt
1 cup extra-virgin olive oil
Freshly ground black pepper
1 pound baby mixed greens


Combine first 4 ingredients in a large bowl. Slowly add olive oil in a steady stream, whisking until mixture thickens. Season to taste with black pepper. Drizzle over mixed greens. Serve remaining vinaigrette on the side.
