Asian Lettuce Wraps

These bundles are especially refreshing on warm nights. If peanut sauce is too spicy, try Chinese plum sauce instead.

2 cups precooked chicken strips
1 1/2 cups cooked rice
3/4 cup peeled, diced cucumber
12 Bibb or Boston lettuce leaves
3/4 to 1 1/2 cups bottled peanut sauce (in the ethnic aisle of the supermarket)


Prep time: 15 minutes

1. Divide the chicken, rice, and cucumber among the lettuce leaves; drizzle each with 1 tablespoon sauce.

2. Tightly wrap lettuce leaves around filling.
