Applesauce Muffins

1 3/4 cups applesauce
1 egg, beaten
1 cup plus 1 tablespoon all-purpose flour, divided
1 cup whole wheat flour
1 teaspoon baking soda
1/4 cup sugar
1/2 teaspoon salt
1/2 cup raisins
3 tablespoons shortening, melted


Combine applesauce and egg in a mixing bowl; stir well. Combine 1 cup all-purpose flour, whole wheat flour, soda, sugar, and salt; add to applesauce mixture, stirring just until dry ingredients are moistened.

Dredge raisins in remaining 1 tablespoon all-purpose flour. Add raisins and shortening to batter, stirring just until blended

Spoon batter into greased muffin pans, filling two-thirds full. Bake at 400° for 25 minutes or until golden brown.
