8 medium cooking apples (2 1/2 pounds), peeled, cored, and quartered
1/2 cup water
1/2 cup sugar
1 teaspoon vanilla extract
Vanilla ice cream
Combine apples and water in a large saucepan. Cover and bring to a boil. Reduce heat; simmer 20 minutes or until apples are tender. Mash apples.
Add sugar and vanilla, stirring until sugar dissolves. Serve warm or cold, and top with ice cream.
