2 tablespoons minced shallots
1 1/2 tablespoons extra-virgin olive oil
1 tablespoon Dijon mustard
2 teaspoons cider vinegar
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 garlic clove, minced
1/2 pound Brussels sprouts, very thinly sliced
1/4 cup shelled unsalted pistachios
1/2 cup thinly sliced apple


1. Combine first 7 ingredients in a small bowl. Place Brussels sprouts, pistachios, and apple in a large bowl; toss to combine. Add vinaigrette; toss to coat.
