Apple, Fennel, and Celery Slaw

1 teaspoon honey
1/2 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt
1 1/2 cups julienne-cut Granny Smith apple
1 1/2 cups thinly sliced fennel bulb
1 cup thinly sliced celery
1 tablespoon chopped fennel fronds


Combine olive oil, vinegar, honey, pepper, and salt in a medium bowl, stirring with a whisk. Add apple, sliced fennel bulb, celery, and chopped fennel fronds. Toss to coat.
