Step aside oatmeal, there’s a new grain on the breakfast aisle. Amaranth is a naturally gluten-free, rice-like grain that makes for a satisfying and highly-nutritious breakfast. 

Ingredients

2 cups water
1 cup amaranth
Raisins
Dried Cranberries
Honey
Milk

Preparation

Add 1 cup of amaranth to 2 cups water. Bring to a boil, reduce heat, cover, and simmer 20 to 25 minutes or until the liquid is absorbed. Add milk, raisins, dried cranberries, and honey as desired.
