pastry for one 9-inch pie

1 cup all-purpose flour
1/2 teaspoon salt
1/3 cup shortening
2 to 3 tablespoons cold milk


Combine flour and salt in a mixing bowl. Cut in shortening with a pastry blender until mixture resembles coarse meal. Stir in enough milk, 1 tablespoon at a time, to moisten dry ingredients. Turn onto a lightly floured surface, and knead gently to form a smooth ball. Chill dough 1 hour.
