pastry for 2 dozen 3-inch pies

2 1/2 cups all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
1 teaspoon salt
1/3 cup shortening
1 egg, beaten
3/4 cup plus 1 tablespoon evaporated milk


Combine dry ingredients; cut in shortening with a pastry blender until mixture resembles coarse meal. Combine egg and milk; stir into flour mixture with a fork until all ingredients are moistened. Cover, and chill 24 hours.
