2-Inch Pie Pastries

3 cups all-purpose flour
1 1/2 teaspoons salt
1 cup plus 3 tablespoons shortening
9 to 10 tablespoons cold water


Combine flour and salt in a large mixing bowl; cut in shortening with a pastry blender until mixture resembles coarse meal. Sprinkle water evenly over flour mixture; stir with a fork until dry ingredients are moistened. Shape dough in a ball, and wrap in waxed paper. Chill at least 1 hour or until ready to use.
