When a recipe calls for a skillet, can I use a nonstick pan?

You can almost always use a nonstick skillet instead of a "regular" skillet. The advantages of nonstick are that you can usually use less oil or butter, and clean-up will be easier. The only drawback might arise when making certain kinds of sauces that rely on lots of bits of food sticking to the surface to flavor and thicken a pan sauce.
