It's starting to cool off and Fall is officially upon us which means this is my favorite time of year to head to the beach! The crowds are gone, the prices are lower, and the weather is usually perfect. It is my own personal tradition to make my "famous" Mango Salsa every single time I hit the Gulf Coast with friends or family. This recipe is absolutely dynamite with any kind of seafood but you could also pair it with chicken or steak. During our annual family beach trip, each family is responsible for preparing one meal for the whole crowd. You better believe I make grilled fish tacos topped with this salsa on my night to cook and it is ALWAYS a hit! If there are leftovers, the salsa is perfect with tortilla chips or even spooned over a breakfast omelet.

Mango Salsa

Ingredients:

3 ripe mangoes, peeled and chopped

1 cucumber, peeled, seeded, and cored

1 large red bell pepper, chopped

2 jalapeños, cored and chopped

1 small red onion, chopped

1 Tbsp olive oil

Juice of 2 limes

Chopped cilantro to taste

Salt and pepper to taste

Preparation

Mix all ingredients together and refrigerate for at least 1 hour.
