We, as a society, need to be having a larger discussion about the importance and simple elegance that is an English muffin. Those nooks! Those crannies! They are undeniably everything, and you know what? They also make a mean pizza base. If you can’t be bothered with making pizza dough from scratch (I mean, who can?), and you’re just not up for slinging around a glob of store-bought dough (these nights happen, and it is perfectly okay), then you better march yourself straight to the bread aisle and snag a package of English muffins. These fluffy sandwich thins are about to help you win weeknight dinner, one topping at a time.

Let your creative, inner-pizza shop owning personality run free with sauces, cheeses, and toppings galore, or opt for one of these four classic flavor combinations. For all of the following options, all you need to do is crank up the oven to 450°, slice an English muffin in half, load them with toppings, and let them bake at 450° for 10 minutes. Kid-approved and so easy you’ll wonder why you haven’t been doing this all along, these English muffin pizzas are about to win your heart, just like they’ve won ours.

 

Mediterranean

For this option, smear herb cheese spread (such as Alouette) on your muffin half. Top with spinach, artichoke hearts, shredded mozzarella, Kalamata olives, and tomato slices, and send it on into the oven. Of all four options, this one is probably tailored most to an adult palate, however you can easily skip the olives and artichokes if you’re dealing with a picky eater. Finished with a drizzle of extra-virgin olive oil and sliced up into mini quarters, this light and fresh rendition of a Mediterranean pizza is the perfect snack or party app.

Taco

Skip the hard shell vs. soft shell argument for your next taco night and settle on a (you guessed it)...ENGLISH MUFFIN! Start with salsa as your “sauce,” and top with crumbled chorizo, sliced red onion, shredded pepper jack cheese, diced tomato, and fresh cilantro. Get your mini pizza pies in the oven ASAP because taco night is obviously the best night. The crumbled chorizo adds a spicy, meaty kick, but you can top with your protein of choice (or black bean salsa for a hearty vegetarian option). If you’re feeling up to it, go ahead and add some guacamole on top. It might be ~extra~ but it’s totally worth it.

Alright all you pineapple pizza haters—we hear you, but we’re just going to have to agree to disagree. To bring this flavor combo to life, spread marinara across each muffin half, and top with pineapple tidbits, cubed ham, shredded mozzarella cheese, and fresh basil. Now, bake! We can definitely get down with a salty-sweet situation, and this tropical pizza is exactly that.

For a slightly more dessert-themed pizza, we swapped out the basic English muffin for a cinnamon-raisin flavored one instead. For this option, go ahead and lay thin Fuji apple slices across each muffin half, and add on thinly sliced Brie cheese, walnuts, and a silky-smooth drizzle of honey. Get ready for an unrivaled union between fruit, cheese, and bread (the OG power trio if we do say so ourselves).
