Here's how to chiffonade fresh basil.

To slice basil into thin shreds or “chiffonade”, remove the leaves from the stems and stack the leaves. Place the larger leaves on the bottom and make a stack of about 10 leaves. Roll up the leaves lengthwise, and slice all the way through. Fluff the leaves with your fingers to separate.
