1. To peel tomatoes, use a sharp knife to cut a shallow “X” in the bottom of each tomato.
2. Drop tomatoes into a saucepan of boiling water for about 30 seconds. Remove the tomatoes with a slotted spoon.
3. Plunge the tomatoes into a bowl of ice water. Remove the tomatoes from the water, and peel away the skins. Discard the skins and proceed with your recipe.
