To make a quick bread loaf, use the same procedure as you do when making muffins.
First, combine the dry ingredients in a bowl and make a well in the center of the mixture. Combine the wet ingredients in another bowl. Add the wet ingredients to the dry ingredients, and stir just until moistened. Don’t overstir, or the bread will be tough.
Pour the batter into loaf pans that have been greased or coated with cooking spray.
Bake according to the recipe instructions until a wooden pick inserted into the center of the loaf comes out clean. Let the loaf cool in the pan on a wire rack for 10 minutes. Then remove the loaf from the pan and let it cool completely on the wire rack.
