Seafood Paella

I visited a Spanish restaurant last week that specialized in delicious paella. They had both a seafood version and a vegetarian one, but paella with seafood is the traditional recipe. A good paella always includes shrimp, mussels or clams, and a firm white fish such as monkfish, halibut, or sea bass. Add in plenty of colorful veggies and you can't go wrong! I was always under the impression that paella took hours to make, but this recipe changed my mind. It only takes about 45 minutes from start to finish and the results are incredible.
