Whether your recipes calls for shaping cookie dough into balls or dropping dough onto a baking pan, a spring-handled cookie scoop makes measuring dough easy. Manufacturers label scoops in different ways. Some are labeled with a number. The higher the number, the smaller the scoop. Be sure to use a scoop that drops the amount of dough called for in the recipe, or the yield will be incorrect. A #70 scoop holds a level tablespoon of dough.
