One of the most important tips for cooking in a slow cooker is to resist the urge to lift the lid and check on the food before it's done. Opening the lid releases steam and causes the temperature in the cooker to drop. This will increase cooking time. Also, when you lift the lid, temperatures can drop into the “danger zone” (between 40° and 140°) where bacteria multiply rapidly.
