If you have a weekend with very little plans, or maybe a lazy Sunday afternoon, go ahead and prep for some of your meals to save you time during the week. You can roast tomatoes or garlic, toast breadcrumbs, or blanch vegetables. (To blanch veggies, trim and boil green beans, cauliflower, butternut squash, or broccoli for a few minutes just to get them softened. Drain and shock in ice water, and then drain and store for the week.) You can also chop onions, carrots, cauliflower, or broccoli so they'll be ready to go during the week. Store in airtight containers in the fridge.
