1. The first step in making pimiento cheese is to grate the cheese. To get the best results, it’s better to grate your own cheese rather than using a package of shredded cheese. The cheese will be easier to grate if you let it come to room temperature. And, when the grated cheese is at room temperature, it’s easier to stir in the other ingredients.
2. In a large bowl, combine the cheese, a good quality mayonnaise, a small jar of drained pimiento, finely grated onion, Worcestershire sauce, and ground red pepper, and stir well. You can store pimiento cheese in an airtight container in the refrigerator up to one week.
