It's nice to keep a variety of dried herbs and spices on hand in the kitchen, but keep in mind that they lose their flavors over time. If the dried herb or spice doesn't emit an aroma when the jar is opened, it's time to replace it. Heat and sunlight will also cause them to loose their flavor quickly, so store dried herbs and ground spices in a cool, dark place.
