When separating an egg, don't pour the egg yolk back and forth from one half of the eggshell to the other. Doing so increases the likelihood of the shell breaking the yolk and the chance of transferring bacteria. Instead, use your hands to separate the yolk from the white. Just crack the egg and let the white run through your fingers into a bowl. Wash your hands before and after.
