Asparagus has a mild flavor and a delicate texture, although it becomes tougher as it ages. During its peak season (February through June), pencil-thin spears are plentiful. To maintain freshness, wrap a moist paper towel around the stem ends, or stand upright in about 2 inches of cold water.
